Happy Canada Day!

We have an extra special place in our hearts here at my house for Canada Day! It's my daughter's birthday, so we always have a fun celebration. With it being Canada's 150th this year there is even more to celebrate.

I am grateful my parents were able to come to Canada and meet each other and start a family in this wonderful country. I have been able to go to school and work and start my own family in a super cool country! I want and hope for those same advantages for my own children.

In Canada, we are so lucky to have an array of wonderful people, delicious food and so much more. I only barely scratch the surface when there are so many amazing things about this country that I'm sure many people are sharing and have been sharing all year long.

I am adding this short post to wish everyone a Happy Canada Day and also to wish Adriana a super duper Happy Birthday! But also do include this super delicious Canadian ingredient inspired recipe for ribs. One thing you can count on is the the ingredients Canada shares with the world are of the highest standards so you can be sure to enjoy a delicious Canada Day meal with family and friends.

I shared this recipe today with the crew and viewers of CTV Kitchener with love in their eyes and hearts! Thank you all for such a wonderful time and for being great lovers of food as well. Enjoy!

Smoked Canadian Ribs

Using this method helps create a delicious smokey rib that your family and friends will love any weekend! Be sure to check out this list of ingredients that showcase some amazing Canadian ingredients! Yeah Canada!!!

1/4 cup (60 mL) your favourite spice rub (such as Montreal Steak Spice)
2 tbsp (30 mL) canola oil
2 racks pork back ribs (about 4 lb/2 kg total)
1/2 cup (125 mL) maple syrup

1/3 cup (75 mL) Dijon mustard

Easy Jazzed Up Barbecue Sauce:
1 cup (250 mL) your favourite barbecue sauce
1/3 cup (75 mL) apple cider vinegar
1 tbsp (15 mL) Dijon mustard
2 tsp (10 mL) chopped fresh thyme

Place soaked wood chips in smoker box and heat until smoking. Reduce heat to 250 F or set smoker to 250 F.

Remove tough membrane on non-meaty side of ribs with a small knife and tear the membrane away from the ribs.

Stir together spice rub and oil; spread evenly over racks. Place ribs on grill, bone side down and smoke for 3 hours.

Stir together maple syrup and mustard. Remove ribs from grill and place each in large pieces of heavy duty foil. Spread with maple syrup mixture. Wrap up tightly and return to grill for 2 hours.

Easy Jazzed up Barbecue Sauce: Stir together barbecue sauce, vinegar, mustard and thyme; set aside.

Remove racks and unwrap. Return to grill and baste with barbecue sauce frequently for about 1 hour or until well glazed.

Cut into 2 rib portions and enjoy with coleslaw, baked potatoes and corn!
