Breakfast for Dinner or anytime on the GRILL!

If you are like me you may like experimenting in the kitchen and at this time of year that includes on the grill too!
Sometimes you want to have some fun cooking up breakfast, lunch or dinner and if you have a family like mine that loves breakfast than this is for you. You can grill this up in your backyard grill or take it to the campsite for a fun family meal.


Grilled Sausage, Peppers and Tomatoes with Eggs 


Enjoy breakfast on the grill with this hearty dish.

4 mild or hot Italian sausages 
2 tbsp (30 mL) extra virgin olive oil
1 onion, sliced
5 cloves garlic, sliced
2 red peppers, cut into wedges
2 yellow peppers, cut into wedges
1 1/2 cups (375 mL) canned plum tomatoes, crushed with a fork
10 fresh basil leaves, torn in half
Pinch each salt and pepper
4 eggs

Place sausages on medium high grill for about 15 minutes, turning occasionally or until no longer pink inside.

Meanwhile, in a cast iron skillet heat oil on medium high grill; add onion and garlic and cook stirring for 4 minutes. Add red and yellow peppers and cook, stirring for about 5 minutes or until golden. Add tomatoes, basil, salt and pepper and bring to a simmer. Simmer for about 10 minutes.

Crack eggs into a small bowl and add into pepper and onion mixture; close lid and cook for about 5 minutes or until egg is set to desired doneness. Serve up with sausages.

Makes 4 servings.




Waffles for Bacon and Cheese Grill Sandwich

Enjoy waffles for a weekend brunch or light dinner. Waffles can be the backdrop for so many tasty meals, give it a try. If you are taking this to the campsite this weekend be sure to make your waffles ahead and freeze them for later!
1-1/2 cups (375 mL) all-purpose flour  
1 tbsp (15 mL) granulated sugar  
2 1/2 tsp (12 mL) baking powder   
1/4 tsp (1 mL) salt    
3 eggs, separated  
1-1/4 cups (300 mL) milk 
1/4 cup (60 mL) butter, melted and cooled 

In bowl, whisk together flour, sugar, baking powder and salt. In another bowl, whisk together egg yolks, milk and butter. Pour over flour mixture and whisk until smooth.

In clean bowl, beat egg white until stiff peaks form. Fold one quarter into batter; fold in remaining whites.

Heat waffle iron. For each waffle brush lightly with oil; pour in about ½ cup (125 mL) of the batter. Close lid and cook for about 4 minutes or until steam stops and waffle is crisp and golden. (This time and amount will vary depending on your waffle iron) 

Makes about 10 waffles (depending on waffle iron size).


Bacon and Cheese Grill Sandwich

10 waffles
Mayonnaise 
Cooked sliced bacon 

5 to10 slices of your favourite cheese (cheddar is our fav)

Top half of the waffles with mayonnaise and bacon. Top with cheese and remaining waffle halves.

Place on greased grill over medium low heat and grill, turning once for about 4 minutes or until golden and cheese melts. ENJOY!
